Matthew, how long does the salami keep in your kit? Do you freeze it first?

No – actually never thought of freezing it… off to do some research now!
The good thing with Salami is that it will happily keep in a sealed bag in your warm panniers – I tend to go for a supermarket version, simply because I know it’s got some preservatives in it – not what I’d normally buy but a good back up.
Otherwise I just buy it on the road as I’m going along, it’s my basic staple – that and laughing cow cheese triangles
